The answer is simpler than you might think: chaffles are simply cheese waffles!

Unlike their cousins, chaffles are made with just two ingredientseggs and cheese — and have gained popularity thanks to the ketogenic diet, a high-protein, low-carb eating style. Like waffles and gaufres, they’re suitable for both sweet and savory preparations. You can spread them with jam for an energizing breakfast, enjoy them like pancakes with maple syrup, or fill them with ham for a waffle sandwich at lunchtime.

All you’ll need is a large-hole grater to grate the cheese and a classic griddle or waffle iron to cook the batter. Still a little skeptical? You just have to try them, just like we did! We bet chaffles are ready to surprise you.

1) Chaffle with Edible Flowers

The Chaffle with edible flowers closes the “Flowery Menu” for the “Build the Menu” section.

The chaffle originated in the United States as a creative solution within low-carb and ketogenic diets.

The name is a fusion of “cheese” and “waffle”, because the basic ingredients are egg and cheese, cooked on a griddle or waffle mold.

It became popular around 2019, thanks to blogs and online communities dedicated to the ketogenic diet, which were looking for alternatives to bread and traditional waffles with very few carbohydrates.

The success of the chaffle is due to:

Ingredients

  • 4 eggs
  • 200 g grated mozzarella (pizza type)
  • Edible flowers
  • Salt and pepper, to taste

Steps

  1. In a bowl, beat the eggs, add the mozzarella, salt, and pepper, then mix well.
    (1 egg per 50 g of cheese)
  2. Add the chopped edible flowers and mix gently so they don’t break too much.
  3. Pour half of the batter onto a hot griddle and cook until golden brown and crispy (about 3–4 minutes).
  4. Repeat with the remaining batter.
  5. Alternatively, pour the mixture into a waffle mold and cook in the oven at 180°C for 15–20 minutes.
  6. To combine with chicken breast strips:
    • Cut the chicken into strips
    • Sauté with paprika, rosemary, and lemon juice

My edible flower mix includes:

  • Squash blossoms
  • Hibiscus
  • Thyme flowers
  • Rosemary flowers
  • Butterfly peas
  • Geranium

2) Chaffles: Cheese and Egg Waffles

You only need 3 ingredients (not including salt). I used 1 whole egg and the whites of 2 eggs, but you can use whole eggs if you prefer. For cheese, I used grated Swiss cheese, but any cheese you have at home works well. The chives add a delicious flavor.

I can’t even begin to tell you how delicious these chaffles are. They were a huge hit at home. Norman ate them with a drizzle of honey, while I served mine with avocado, which the boys also enjoyed. They’re super nutritious and have become one of our favorite breakfasts.
