Recipe preparation

  1. We mix the yeast with the lukewarm milk and the syrup in a bowl.
  2. Add the flours and salt. Mix until the flour and liquid are fully incorporated, resulting in a light, sticky dough.
  3. We add the butter and incorporate it into the dough, squeezing it with our hands.
  4. We leave our dough to rest in a bowl for 10 minutes, cover it with a cloth and keep it away from drafts.
  5. Take the dough out of the bowl and place it on a lightly greased surface and knead for about 10–15 seconds. Finish by forming a ball.
  6. Dry the bowl, grease it with olive oil, and let the dough rest again for 10 minutes.
  7. Repeat this kneading process two more times, allowing the dough to rest for 10 minutes between each kneading. Finally, let the dough rest for another 30 minutes.
  8. Grease and flour a 12×19 cm rectangular mold.
  9. Divide the dough into two equal parts, form balls, place them together in the mold, cover, and let them rest until they double in volume.
  10. Preheat the oven to 210ºC.
  11. Brush the bread with milk or cream and bake for 15 minutes.
  12. Lower the temperature to 180ºC and bake for approximately 30 minutes, until the bread has a shiny dark brown color and pulls away from the sides.
  13. Remove from the oven, carefully unmold, and let it cool on a wire rack.
