As a preliminary tip, it’s ideal to choose carrots that are similar in size, or cut them into sizes as similar as possible so that:

  1. The cooking time will be the same.
  2. They all end up creamy inside.
  3. And crispy outside.

Instructions

  1. Preheat the oven to 220ºC or 430ºF.
  2. Slice the carrots. You can peel them or not, it’s up to you.
  3. Put the carrot slices along with the rest of the ingredients (except the fresh parsley) on a baking tray and stir with your hands until well combined.
  4. Bake for about 20–30 minutes or until golden brown and tender.
  5. Sprinkle the parsley on top and serve immediately, or store leftovers in an airtight container in the refrigerator for 4–7 days.

  1. Wash the carrots well and drain them, then peel them and arrange them in a tray.
  2. In a pan, heat the olive oil and add salt, black pepper, thyme, cumin, and cloves.
  3. Using a brush, coat the carrots with the oil and spice mixture, and place them in the oven at a moderate temperature for 4 minutes.
  4. Take the tray out of the oven, turn the carrots over, repeat what we did with the oil mixture, then put it back in the oven for two minutes.
  5. In a bowl, mix the yogurt with the garlic and lemon and stir well.
  6. Place half the carrots in a flat dish, pour the yogurt mixture over them, and serve.
