Ingredients:
- 1 cup of long grain rice, washed
- ¾ cup canned whole coconut milk, unsweetened
- ½ teaspoon of salt
- ½ cup of water

Instructions:
- Mix the coconut milk and water in the measuring cup.
- Add the rice, coconut milk, salt, and water to the rice cooker and mix.
- Cover the rice cooker, press the “Cook” button, and let it work its magic. When the rice is cooked, you’ll see that the keep warm button remains lit.
- When it’s done, turn off the rice cooker, open it, fluff the coconut rice, and it’s ready to serve.
Grades
Use unsweetened, canned whole coconut milk. Shake well before opening to prevent separation. If you’re using coconut cream, you’ll need to dilute it with water.
If you happen to only have coconut cream instead of coconut milk, try using 1/2 cup of coconut cream, and the rest of the liquid will be water to make up the 1 1/4 cups of liquid needed to cook the rice.
