Easy Concha Recipe

A classic of Mexican sweet bread that combines tradition, flavor and texture in every bite. Famous for its crunchy topping and its fluffy interior.

Recipe Ingredients

Dough for Covering Conchas

  • Flour 100 gr.
  • Vegetable shortening
  • 100 gr Powdered sugar
  • 100 gr. Cocoa 15 gr.
  • Vanilla extract 10 gr.

Step-by-Step Instructions:

  1. Sift the wheat flour with the powdered sugar in a bowl. Add the vegetable shortening and mix with your hands until you obtain a smooth and homogeneous dough.
  2. Divide the dough into 2 portions and place them in separate containers; add cocoa to one and vanilla extract to the other. Knead both doughs independently until you obtain a uniform color in each one. Cover them with plastic wrap and set them aside.
  3. Prepare the dough following the procedure for Bizcocho Dough; incorporate the vanilla extract after adding the eggs and substitute the margarine for the butter and lard.
  4. Lightly grease a bowl, place the dough in it and cover it with plastic wrap. Let the dough rest in refrigeration for a minimum of 4 hours.
  5. Remove the dough from the refrigerator, flour a work surface, place the dough on top and punch it down. Divide it into 70-gram portions and let them rest for 10 minutes. Shape them into balls and place them on the trays, separated by a few centimeters.
  6. Lightly flatten each dough ball with the palms of your hands, cream a little vegetable shortening and spread it over each one.
  7. Sprinkle a little flour on the table, place the concha topping on top and knead it. Form with it spheres of 3 centimeters in diameter and flatten them with lightly floured hands to obtain thin discs.
  8. Cover the dough balls with the topping discs and press each one with the concha marker to create a design similar to that of a seashell. Let them rest until they double their volume. Preheat the oven to 170 °C.
  9. Bake the conchas for 18 minutes or until the base is golden. Remove them from the oven and let them cool on the rack.
