Easy Mexican Pizza Recipe

First of all, I don’t know if calling this pizza “Mexican Pizza” is pretentious. I’ve never been to Mexico and I’ve never eaten at a Mexican pizzeria. In fact, I don’t even know if the term “Mexican pizza” officially exists.

From what I’ve seen and read online, the term Mexican-style pizza usually includes ingredients that are typical of Mexican cuisine, such as corn, avocado, beans, jalapeños, chipotle, and spicy sauces.

I think this pizza will be the first in a series of Mexican-style pizzas. The reason is simple: the last time I went to the supermarket, I bought several Mexican products to start experimenting with in my everyday cooking since I don’t usually use them much. I picked up mole, chipotle, jalapeños, and green tomatillo salsa, and everything looked amazing.

Also, the kids are getting older and their palates can now handle stronger and more varied flavors, so it’s easier to prepare more exciting meals for the whole family.

So, with that in mind, this is my version of a Mexican-style pizza.

What Kind of Chorizo Do We Use for the Pizza?

For this pizza, I used spicy chorizo from León from one of my regular suppliers, Embutidos Ezequiel. This chorizo has a strong spicy kick and works perfectly for this recipe.

Ideally, you should use a hot and flavorful chorizo, since one of the main ideas behind this pizza is to make it spicy enough to enjoy with a cold beer. If you don’t have spicy chorizo available, you can sprinkle a little chili pepper over the pizza before baking.

How Do We Prepare Jalapeños for Pizza?

If you can find real jalapeño peppers, they’re the best option for this recipe. Nowadays, they’re usually easy to find in most supermarkets.

If you can’t find jalapeños, you can replace them with:

What Cheese Do We Use on the Pizza?

I used buffalo mozzarella for the pizza base because it gives structure to the toppings without adding too much flavor.

Instructions:

Step 1

Start by preparing the pizza dough. Place the flour, salt, and instant dry yeast into the bowl of a stand mixer. Mix briefly using the dough hook attachment so the ingredients combine evenly.

Add the water and olive oil, then begin mixing on low speed until the dough starts coming together.

Step 2

Once the dough forms a ball, increase the mixer speed and knead for approximately 10 minutes until the gluten develops properly and the dough becomes smooth and elastic.

Step 3

Remove the dough from the bowl and shape it into a ball. Place it into a lightly greased bowl and cover it with a damp cloth or plastic wrap.

Let the dough rise in a warm place, around 30°C (86°F), for about 40 minutes or until it doubles in size.

After the resting time:

  1. Divide the dough into two equal parts for two pizzas, or
  2. Roll it out into one large pizza base

At this stage, you can choose between a thick crust or a thin-crust pizza.

If desired, add the refried bean paste during cooking or spread it later while assembling the pizza.

Sprinkle plenty of grated mozzarella cheese over the pizza.
