Healthy Baked Cauliflower Recipe

Does it really taste like potato chips? Does it really taste good with ketchup? The answer is a resounding “Yes”.

Of course, they don’t have the same texture as French fries, but cauliflower is a vegetable with a flavor similar to potatoes, and when you use a little ketchup, it’s very good.

Healthy Baked Cauliflower Recipe

Cauliflower is a very nutritious vegetable, low in calories and carbohydrates and high in vitamin C and vitamin K. Most people have tried boiled or sautéed cauliflower, but not baked cauliflower. Baked, cauliflower takes on a delicious flavor similar to French fries.

When I first read about it, I didn’t believe it either. But I tried it with some friends, and they were ALL surprised when I served them baked cauliflower with ketchup. Not only does it taste great and it’s healthy, but it’s also one of those vegetables that’s very filling.

IMPORTANT: IT HAS TO BE FRESH CAULIFLOWER – not frozen!

A good serving of cauliflower for one person is half a small cauliflower, or a third of a large one. This is if you’re not including another side dish like salad, rice, potatoes, or anything else.

Even my husband, who’s picky about vegetables, had to admit that the flavor is similar to French fries. I use roasted cauliflower as a side dish for any protein—meat that goes well with French fries.

Update: You can try making it in an air fryer!

Finally on the plate. This was my real dinner. A steak with onions, baked cauliflower… with ketchup (instead of fries) and a little avocado. Truly delicious food.

Baked Cauliflower Recipe

Ingredients

Cauliflower, without leaves or stems, chopped into pieces (not frozen)1

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Cut the cauliflower into medium‑sized pieces. Very small pieces can burn.
  3. Place the cauliflower in a bowl and add enough olive oil to create a light coating on all the pieces. Add kosher salt to taste.
  4. Mix everything well with your hands to ensure complete coverage.
  5. Spray a little oil onto a baking tray (you can cover it with aluminum foil first for easy cleanup).
  6. Scatter the cauliflower pieces on the tray.
  7. When the oven reaches the temperature, bake for 15 minutes.
  8. Turn the pieces over and bake for an additional 10 minutes.
  9. Serve with ketchup on the side.
