Add a crispy, fried panko coating, and I promise you it’s an explosive combination. You won’t be able to stop eating them!
To bread them, we do the same thing we do with breaded shrimp, for example.
- First, they go in flour.
- Then in egg.
- Finally in panko.
I wanted them to be extra crispy, so I actually dipped them twice in egg and panko.

Instructions
- Place a large skillet over medium heat and pour in vegetable oil until it reaches approximately 1 inch in depth.
- The ideal temperature for perfectly golden-brown fried pickles is 375°F.
- Sift the cornmeal and all-purpose flour into a large bowl.
- Mix vigorously while sifting. This will help create a smooth batter.
- Add a pinch of salt, Cajun seasoning, Italian seasoning, and cayenne pepper.
- Mix all the ingredients together.
- Slowly stir the soda water into the bowl until you achieve a smooth, uniform texture.
- Set the spicy batter aside in a cool place.
- Prepare the pickles.
- Slice them and pat them dry with a paper towel.
- Toss the pickles in the 4 ounces of all-purpose flour and coat them well so the batter adheres better.
- Dip the pickles in the batter until completely coated.
- Using tongs, place them in the frying pan.
- Fry for 1–2 minutes until golden brown.
- Make sure the oil is hot enough before frying to prevent the pickles from becoming soggy and greasy.
- Remove the fried pickles from the oil with a slotted spoon or spatula and drain them on a paper towel.
