This green salsa recipe is ideal for tacos, but you can freeze it and have it ready whenever you need to prepare a stew with green salsa.
Some of the most popular dishes prepared with green salsa are enchiladas, green chilaquiles, beef rinds in green salsa, beef entomatado, and chicken tamales in green salsa—well, there are many dishes that use this salsa.

Mexican Green Salsa Recipe

Ingredients

| Green tomatillos without husk and washed | 6 |
| Chopped onion | 3 tablespoons |
| Garlic clove | 1 |
| Serrano chiles (or 1 chile if you use jalapeño) | 2 or 3 |
| Salt for seasoning | to taste |
| Water or so to cook the tomatoes and chiles | about 3 cups |
Instructions
- In a medium saucepan, bring the water to a boil. Add the chiles, tomatoes, and garlic and cook over medium heat for 12‑15 minutes, or until the chiles and tomatoes are soft and cooked through. If using jalapeño peppers, remove the tomatoes as soon as they are cooked, as jalapeños take a little longer to cook. Continue cooking the jalapeño peppers for a few more minutes until they are cooked through.
- Once all the ingredients are cooked, remove them with a strainer and reserve ½ cup of the cooking water.
- Place the chiles, tomatoes, garlic, and onion in a blender and blend until smooth. If needed, add some of the reserved cooking water.
- Serve the sauce in a bowl and season with salt to taste.
This sauce keeps very well in the refrigerator for 3 days and freezes very well for a couple of months.

- You can add chopped cilantro when serving, and even while you’re blending the salsa.
