The ones I’m presenting to you today are very crispy, easy to prepare, and have a spectacular flavor.

What Are They and Where Do They Come From?

Enoki mushrooms are either Flammulina filiformis or Flammulina velutipes. They are two practically identical varieties.

They grow on dead trunks of various types of broadleaf trees, grow very quickly, and thrive in small containers with wood chips and straw, in darkness (hence their white color; if exposed to sunlight, they turn brown).

Although they look similar, they have nothing to do with magic mushrooms (Psilocybe cubensis). In fact, none of their relatives contain any hallucinogenic compounds. This is clarified because sometimes people confuse the name.

Enoki mushrooms can also be grown in Spain, even at home, because there are very practical pre-inoculated cultivation kits and they are not too demanding in terms of care.

What do they taste like?

Their flavor is similar to:

  1. Fresh thistle mushrooms
  2. Oyster mushrooms
  3. White mushrooms

But overall, they are very mild and subtle.

When you open them, they have a faint smell of mushrooms and damp earth, because they come with a piece of mycelium. If they’re spoiled, they smell like fish.

As for the texture:

  • They are like a bunch of thin strips
  • Slightly crunchy
  • Caps are soft and slightly mucilaginous (but not unpleasant)

And how do you eat that?

Like many other mushrooms, enoki mushrooms can be eaten raw, although they are usually cooked to improve both flavor and texture.

Storage tips

  1. Make small holes in the bag so they can breathe
  2. Otherwise, they absorb moisture and become slimy
  3. You can transfer them to another breathable container
  4. Always keep them in the refrigerator

Preparation steps

  1. Remove the bottom part (mycelium area)
  2. Cut up to the first mark on the packaging
  3. Wash them properly:
    • Rinse under tap, or
    • Soak in water and shake
  4. Dry them well using kitchen paper or cloth

After that, they are ready to use. If you store leftovers, keep them in a breathable container with a paper towel to absorb moisture.

But does that feed you?

Yes, of course they’re nutritious. They contain:

  • Iron
  • Copper
  • Fiber (chitin)
  • Thiamine
  • Riboflavin
  • Niacin
  • Folic acid
  • Pantothenic acid
  • Phosphorus
  • Potassium
