Preparation

  1. Preheat the oven to 180°C. Add 240 ml of boiling water to a measuring bowl. Add 30 grams of chocolate, the brown sugar, and the ground coffee to the water. Stir until dissolved.
  2. In a large bowl, combine and whisk together the flour, baking powder, baking soda, salt, sugar, and the remaining cocoa powder. Add the milk, egg, and oil, and continue stirring until well combined.
  3. Grease a baking tray with butter and place the toffee candies on the bottom. Pour the batter over them, making sure it’s evenly distributed. Then add the coffee and cocoa mixture on top, but don’t stir it in so it doesn’t disturb the batter.
  4. We put the cake in the oven and leave it until the top is firm and starts to overflow slightly. This usually takes about 35 minutes.
  5. We let it cool a little and plate it, covering it with chocolate syrup, vanilla ice cream and a non‑alcoholic cherry in syrup.

Chocolate and caramel cobbler is also delicious when served with citrus ice creams, such as mandarin or lemon.
