Ingredients
For the dough:
- 400 grams of precooked corn flour (for arepas, white or yellow)
- 500 cc of warm water
- 1 tablespoon of oil
- 1 teaspoon of salt
For the “Reina Pepiada” filling:
- 300 grams of chicken (preferably breast)
- 50 grams of carrot
- 30 grams of onion
- 2 liters of water
- 2 avocados
- 1 Knorr chicken broth in cube
- 3 tablespoons of Hellmann’s Classic Mayonnaise
For the “Perico” filling:
- 2 tomatoes
- 2 eggs
- 50 grams of onion
- 30 grams of green bell pepper
- 2 tablespoons of olive oil
For the “Caribbean Style” filling:
- 2 avocados, diced
- 200 grams of pineapple cut into cubes
- 200 grams of cubed feta cheese
- 3 tablespoons of Hellmann’s Classic Mayonnaise
- 2 tablespoons of lemon juice
- 1 tablespoon of fresh cilantro
Step by Step Instructions
For the dough:
- In a bowl, combine the cornmeal and salt. Add the tablespoon of oil and the warm water.
- Use a spoon to combine all the ingredients until a dough forms. You can add more water or more flour to achieve a smooth mixture.
- Take small portions of dough (approximately 80 grams) and shape them into small loaves with your hands or a rolling pin. The ideal thickness is 1 to 2 cm.
- Once you have all the arepas formed, place a drizzle of oil in a griddle or frying pan and cook them until they are golden brown on each side.
- Keep them warm and just before serving, make a cut (like a sandwich). Add the filling and they’re ready to eat—delicious!
- Once you’ve made all the arepas, the hardest part arrives: choosing the filling!

Reina Pepiada, classic filling
- In a pot, combine the water, chicken, chicken bouillon cube, onion, and roughly chopped carrot. Cook over low heat for approximately 30 minutes.
- Let it cool and shred the chicken. Set it aside without broth or vegetables.
- In a bowl, combine the chicken, diced avocado, and mayonnaise. Mix everything together, and your Reina Pepiada filling is ready.
Perico, another classic to surprise
- Dice the tomato and bell pepper. Sauté them in a pan over medium heat with the oil for 3 minutes.
- Add the tomato and the lightly beaten egg and cook for 3 more minutes. Is that it? Yes, it’s ready to fill the arepa.
Caribbean style, the ultimate filling for your arepas
- In a bowl, mix the mayonnaise with the lemon juice.
- Add the avocado, cheese, and pineapple, all diced. Add the cilantro and combine all the ingredients with a spoon. That’s it!
