A few days ago, I was talking to my husband about how tired I sometimes get of eating meat. I told him that it seems as we get older, our bodies need more and more energy to process it, and that’s why I feel so heavy after eating.

This doesn’t mean I’m going to become a vegetarian, because I like to eat everything in moderation, but I do think it’s important to pay attention to how our bodies react to certain foods at certain times and act accordingly.

So, one of those days when I was fed up with meat, I made these canned salmon fritters, which turned out to be as delicious as they were easy. They practically don’t need a recipe, but since I have to write something here, I’ll tell you how I made them.

Ingredients

Chopped garlic2 cloves
Chopped onion¼ cup
Chopped red bell pepper¼ cup
Chopped green bell pepper¼ cup
Eggs2
Breadcrumbs or cornmeal½ cup

Corn flour (additional)as needed
Frying oilas needed

Preparation

  1. Drain the salmon and remove the skin and bones. Place it in a bowl and flake it.
  2. Add the rest of the ingredients: garlic, onion, red and green bell pepper, the eggs and half a cup of breadcrumbs or cornmeal.
  3. Mix all the ingredients, take portions to make the small cakes and coat them in corn flour so that they absorb moisture and facilitate cooking, and also give them a crispy outer layer.
  4. Fry them in hot oil until golden brown on both sides; transfer them to a plate lined with paper towels to remove excess oil. Serve and enjoy!
