I can’t count how many times I’ve eaten this tender, juicy roast beef and caramelized onion sandwich. It was my favorite dinner on the days my mother slowly roasted a piece of meat with rosemary, salt, and pepper. I loved slicing thin, pinkish slivers and placing them on a soft bread roll.

Sometimes I’d add caramelized onions and goat cheese, other times fried green peppers, and if I was feeling rebellious, I’d whip up some spicy guacamole. However, I made it, it always lived up to my expectations.

Now, many years later, when I decide to make roast beef, it’s my son whose face lights up because he knows that our classic movie night dinner will be a tender, fluffy meatloaf with onions and cheese.

Like me, he also enjoys improvising to create different versions and asks me to add sweet and sour pickles or thin slices of tart apple. Brilliant combinations that go fantastically well with these flavors.

Step-by-Step Instructions:

  1. To make this meat sandwich, we’ve decided to use pre‑seasoned kebabs. So, cook the meat on a griddle until done and set aside. You can also use a beef steak and marinate it with the same spice mix as the kebabs: cumin, pepper, ginger, sweet paprika, turmeric, saffron, garlic, coriander, onion, parsley, lemon juice, salt, and oil. These kebabs are made with marinated minced pork, very popular in Spain and readily available at the supermarket.
  2. If you have a whole piece of cheese, take advantage of the time while the meat is cooking and grate enough cheese to make your steak sandwich. You can also use sliced cheese.
  3. The classic way to serve this version of a meat sandwich is with shredded meat, so when the skewers, already prepared, have cooled down a bit, chop them finely or shred them as seen in the photo.
  4. To assemble our Moorish kebab sandwich, slice the loaf of bread in half and toast it lightly. Once the bread is warm, spread mayonnaise on one half. If you want to make the sauce yourself, you can follow the homemade mayonnaise recipe or try avocado mayonnaise, which should also be great.
  5. Next, place a good layer of meat; the idea is that the skewer sandwich is full of meat, so add as much as you can.
    • Tip: If the meat has cooled down too much, you can give it a quick warm‑up in the pan to melt the cheese, which we will add later.
  6. Finally, add the grated cheese and place the lid on the other half of the baguette bread. If you like, you can include more ingredients, such as something to eat with lettuce leaves or avocado, tomato, or roasted peppers.
  7. Our meat and cheese sandwich is perfect for lunch or dinner. This quick and easy recipe is a great way to use up leftover meat or simply enjoy the delicious flavor of kebabs in a fun and original way. Enjoy!
