In many cases, the first birthday cake is also the first cake our baby tastes, so many parents choose to make it at home to ensure they know exactly what ingredients it contains or to prepare it according to the dietary needs of their baby or the family.
Plus, making it at home makes it even more special, as we can involve our baby in the whole process, sitting them in their highchair to join us and be part of this moment. | Sugar | 125 g |
| Vanilla essence | 1 teaspoon |
| Pastry flour | 120 g |
| Salt | a pinch |
| Strawberry | 220 g |
| Whipping cream | 250 ml |
| Icing sugar | 30 g |
Step-by-Step Guide:
- We’ll start by preheating the oven to 180 degrees Celsius (350 degrees Fahrenheit) with the top and bottom elements on.
- Next, we’ll beat the eggs with the sugar in a mixer with whisk attachments or by hand for ten minutes, until the mixture is fluffy and pale, and when you lift the mixture, it forms a ribbon on top of the batter that holds for a few seconds.
- Gently add the sifted flour and fold it in very delicately with a spatula so as not to deflate the mixture.
- Pour the batter into a buttered and floured baking pan and bake for 20 to 25 minutes.
- Once the cake is baked, remove it from the oven and turn the pan upside down so it’s as flat as possible. Leave it like this for ten minutes, then unmold it to cool.
- Once cooled, cut the cake into two or three layers and whip the chilled cream with the icing sugar. Chop the strawberries, reserving six for decoration.
- Spread the whipped cream on one of the layers, top with the chopped strawberries, and repeat if you have three layers.
- Finally, dust the surface with icing sugar and arrange the halved strawberries on top for decoration. Serve immediately or keep refrigerated.
