How to Make Frosting for Cakes?

Icings are preparations typically used to decorate or finish sweets and baked goods such as muffins, cakes, croissants, and cookies. We can make different types of icing, although perhaps the most well-known are white icing and chocolate icing (the latter can be matte or glossy).

In this case, we’re going to prepare a basic white icing. It can be made more or less liquid, but the most important thing when making a good icing is that it hardens when it dries.

The great thing about white icing is that if we want to add different colors to the preparation, we can divide it into separate containers and add the food coloring of our choice to combine them as we like.

We can also add different flavorings such as vanilla, lemon, violet, or cherry. Be careful with this, though, because a couple of drops will be enough.

Step-by-Step Instructions

  1. Place the softened butter in a food processor bowl fitted with the whisk attachment. Beat the butter until smooth and the color has lightened at speed 4.
  2. Attach the sifter and scale accessory to the food processor and mix the icing sugar in the bowl at speed 4 while continuing to mix.
  3. Add the vanilla extract and whipping cream, and mix at speed 6 until well combined.
  4. For a firmer glaze, add more icing sugar. For a softer glaze, add more cream, one tablespoon at a time.
  5. Use a cake turntable that allows you to easily smooth the frosting without having to turn the cake upside down while applying the frosting.
  6. Use a piping bag to distribute the icing evenly.
  7. Place strips of baking paper under the edge of the cake to help you achieve a clean edge. Remove them once you’ve applied the frosting to the cake.
  8. Use icing spatulas; they are the key to achieving a smooth icing.
